STRAWBERRY LEMON GINGERBREAD MAN GUMMIES
1 cup Campoverde Jumbo Strawberries
3 tbsp. of Fresh lemon juice
3 tbsp. Honey
4 tbsp. Unflavored gelatin
Place the strawberries in a food processor or blender and mix until smooth. Make sure you get 1 cup of pureed strawberries.
Place the puree in a saucepan. Add the lemon juice and honey. Heat mixture over medium / low heat for 3 minutes, until hot.
Slowly sprinkle gelatin while whisking to break up clumps. Bring to a low boil. Beat continuously for about two minutes.
Remove the mixture from the heat. Using a tablespoon as a measure, carefully pour the mixture into molds.
Place the mold in the refrigerator for at least 1 hour to set. Remove from the molds and store in an airtight container in the refrigerator.
Tip: Place the silicone mold on a small baking sheet or plate for easy transfer to the refrigerator.
