MANGO CEVICHE

You Need:

1 cup of Campoverde Mango Chunks chopped into small squares

1 lb. of Grouper, minced

½ cup of Diced white or red onion

¾ cup of Lime juice

½ cup of Lemon Juice

2 Tomatoes, diced with seeds removed

1 Jalapeño pepper, chopped into small pieces with the seeds

removed

1/3 cup of Coriander

2 tbsp. of Olive oil

1 tsp. of Salt

¼ tsp. of Pepper

Instructions:

Combine the grouper, onion, lime and lemon juices in a container, pressing the fish down so that it is submerged in the liquid.

Cover, and cool for 3 to 4 hours, stirring constantly, until the fish is opaque in the center.

Then, combine the rest of the ingredients in a larger container.

Tip: If you are going to have a party, accompany it with toasts or your favorite chips.
